1.Check the text file's encoding, line endings, and longest lines before you convert it.
2.Set page size, orientation, font size, margins, and wrapping to suit prose, logs, or code.
3.Make the PDF and look at accented characters, page breaks, indentation, and long lines at normal zoom.

Font size and margins decide how many characters fit on a line and how many pages you end up with.
Landscape keeps wide log lines intact. Wrapping suits prose on a narrower page.

Plain text has no headings, tables, images, or styling, so there is nothing of that kind to carry over.
A very long unbroken string will overflow or wrap somewhere awkward.

Why are accented characters wrong?

The file is probably in a different encoding than the one detected. Save it as UTF-8 and convert again.

Will my tabs line up?

Tab width depends on tab stops and font metrics. A monospace font, or spaces instead of tabs, is far more predictable.
